So it’s 9 pm two nights before grocery day and you notice that you’re out of bread. No problem, you think, we can manage, I’ll find something to feed the kids tomorrow. Tomorrow comes and after the cereal and porridge breakfast the kids want a snack. Uh oh. No crackers either. Now what? I had 2 hours before lunch time, dishes everywhere and no room to knead dough so I pulled out the cookbook I got when I was a kid and made “no knead yeast rolls”. Not exactly bread but close enough.
2 cups all purpose flour
1 tbsp active dry yeast
1 1/4 cup milk
1/2 cup butter or margarine
1/4 cup sugar
1 1/4 cup all purpose flour
In large mixing bowl mix the 2 cups flour and the yeast.
Put milk, butter and sugar in saucepan and heat until butter is melted and mixture is warm. Pour into flour, add egg and mix until you don’t feel like mixing anymore. Gradually add the 1 1/4 cups flour and beat until smooth.
Cover and let rise 1 hour.
Beat dough with wooden spoon, let rest 5 minutes. Grease 20 muffin pans and drop batter into pans, filling about halfway. Cover and let rise 30 minutes. Preheat oven to 400 F.
Bake 12 to 15 minutes or until golden.
My son, who is particular about food, will devour baked goods straight out of the oven. Once they’ve cooled we’re back to begging, pleading, bribing and trickery.
